Global per capita consumption of aquatic foods has never been higher though significant differences between nations exist. The human benefits of food and nutritional security coupled with lower food safety risk extend to reduced impact of the food system on nature and climate change, associated with farming of cold-blooded animals. These holistic One Health benefits of the so-called ‘Blue Transformation’ can only be achieved, however, by protecting and enhancing water quality in our rivers, seas and ocean and, by mitigating impacts of climate change at locations where aquatic production can occur.
